Instructions
Preheat oven to 400°F (205°C) if using fresh pumpkin.
Roast or steam fresh pumpkin cubes until soft, then blend until smooth.
In a blender, combine pumpkin puree, spices, sweetener, acidic component, and cream.
Blend until smooth, adding water or cream if needed to adjust consistency.
Pour mixture into a saucepan and simmer over low heat for 10-15 minutes, stirring occasionally.
Taste and adjust seasoning, then remove from heat and let cool before serving.
Notes
For a dairy-free version, use coconut milk or another non-dairy alternative.
