Ingredients
Pie Crust

Bartlett or Bosc, peeled and sliced

zest of one lemon

For Assembly

egg
beaten, for egg wash

for sprinkling on top (optional)
Instructions
Combine the flour, salt, and sugar in a large mixing bowl.
Add chilled butter and work it into the flour mixture until it resembles coarse crumbs.
Gradually add ice water, mixing until the dough forms. Shape into a disk, wrap, and chill for at least one hour.
Peel, core, and slice the pears. Mix with sugar, spices, cornstarch, lemon zest, lemon juice, and vanilla extract. Let sit for 15 minutes.
Preheat oven to 375°F (190°C). Roll out the dough and place in a 9-inch pie dish.
Fill the pie crust with the pear mixture and spread evenly.
Roll out remaining dough for a double crust or cut strips for a lattice top. Trim and crimp edges.
Brush top with beaten egg and sprinkle with sugar.
Bake for 50-60 minutes until golden brown and bubbling.
Let cool on a wire rack before serving.
Notes
For added flavor, try adding a pinch of cardamom to the filling.
