Ingredients
  

Pie Crust

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup unsalted butter chilled and cut into small cubes
  • 6-8 tbsp ice water

Pie Filling

  • 6-7 ripe pears Bartlett or Bosc, peeled and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 lemon zest zest of one lemon
  • 1 pinch salt

For Assembly

  • 1 egg beaten, for egg wash
  • 1 tbsp sugar for sprinkling on top (optional)

Instructions
 

  • Combine the flour, salt, and sugar in a large mixing bowl.
  • Add chilled butter and work it into the flour mixture until it resembles coarse crumbs.
  • Gradually add ice water, mixing until the dough forms. Shape into a disk, wrap, and chill for at least one hour.
  • Peel, core, and slice the pears. Mix with sugar, spices, cornstarch, lemon zest, lemon juice, and vanilla extract. Let sit for 15 minutes.
  • Preheat oven to 375°F (190°C). Roll out the dough and place in a 9-inch pie dish.
  • Fill the pie crust with the pear mixture and spread evenly.
  • Roll out remaining dough for a double crust or cut strips for a lattice top. Trim and crimp edges.
  • Brush top with beaten egg and sprinkle with sugar.
  • Bake for 50-60 minutes until golden brown and bubbling.
  • Let cool on a wire rack before serving.

Notes

For added flavor, try adding a pinch of cardamom to the filling.
