In a large bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough forms a ball.
Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
In a bowl, mix apples, sugar, cinnamon, nutmeg, lemon juice, and flour or cornstarch. Let sit for 10 minutes.
Preheat oven to 375°F (190°C). Roll out chilled dough and cut into circles to fit the pie molds or muffin tin.
Spoon apple filling into each dough-lined mold. Optionally, add nuts, raisins, or caramel.
