Instructions
Preheat oven to 375°F.
Bring a large pot of salted water to a rolling boil. Cook pasta until just al dente. Reserve 1 cup of pasta water before draining.
In a saucepan, melt butter over medium heat. Add flour and stir continuously for 2 minutes to create a roux.
Slowly pour in milk and heavy cream while whisking to avoid lumps. Add optional white wine.
When mixture gently bubbles, reduce heat and add cheeses. Stir until smooth. Season with salt, pepper, paprika, and cayenne.
Gently fold lobster into the cheese sauce, ensuring even distribution.
Mix cheese sauce with cooked pasta and transfer to a greased baking dish.
Sprinkle breadcrumbs and extra Parmesan on top.
Bake for 25-30 minutes until golden and bubbling.
Garnish with parsley or chives. Serve warm and enjoy!
