Instructions
Wash strawberries under cool water, remove stems, and cut into halves or quarters.
In a large saucepan, mix strawberries with sugar and lemon juice. Stir gently and let sit for 10–15 minutes.
Place pan over medium heat. Stir occasionally until sugar dissolves and the mixture begins to boil.
Reduce heat and simmer for 20–25 minutes, stirring frequently, until jam thickens.
Test doneness by dropping a spoonful on a cold plate. If it firms up, it's ready. Otherwise, simmer another 5 minutes and test again.
Skim off any foam that forms on top during cooking for a cleaner jam texture.
Remove from heat and ladle jam into sterilized jars, leaving 1/4 inch headspace. Seal tightly.
Let jars cool to room temperature. Store sealed jars in a cool, dark place for up to 1 year. Refrigerate after opening.
Notes
Try customizing your jam with vanilla, ginger, or a pinch of salt for a unique twist. Always use sterilized jars if storing for long-term.
