Brioche Dough

Instructions
Begin by warming your milk to about 110°F. Combine with a pinch of sugar and yeast. Stir and let sit for 5-10 minutes until frothy.
In a mixing bowl, sift together the flour, remaining sugar, and salt.
Make a well in the dry ingredients, add the yeast mixture and eggs, along with vanilla and lemon zest if using. Mix on low speed.
Gradually add softened butter while mixing. Continue kneading until dough is smooth and elastic (about 10 minutes).
Cover and let the dough rise in a warm area for 1 to 1 ½ hours, until doubled.
Punch down the dough, shape into a loaf, and place in a greased loaf pan. Let rise again for 45 minutes.
Preheat oven to 375°F. Bake for 25-30 minutes, until golden brown and sounds hollow when tapped.
Let cool before slicing. Serve warm with butter, honey, or use for French toast!
