Equipment

  • Stand Mixer
  • Mixing bowls
  • Loaf Pan
  • Baking Sheet

Ingredients

Brioche Dough

  • 4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp active dry yeast (one packet)
  • 1/2 cup warm whole milk (about 110°F)
  • 5 large eggs (room temperature)
  • 1 cup unsalted butter (softened, cut into small pieces)

Optional Flavor Enhancers

  • 1 tsp vanilla extract (for a subtly sweet twist)
  • 1 lemon zest (zest of one lemon for freshness)

Instructions

  • Begin by warming your milk to about 110°F. Combine with a pinch of sugar and yeast. Stir and let sit for 5-10 minutes until frothy.
  • In a mixing bowl, sift together the flour, remaining sugar, and salt.
  • Make a well in the dry ingredients, add the yeast mixture and eggs, along with vanilla and lemon zest if using. Mix on low speed.
  • Gradually add softened butter while mixing. Continue kneading until dough is smooth and elastic (about 10 minutes).
  • Cover and let the dough rise in a warm area for 1 to 1 ½ hours, until doubled.
  • Punch down the dough, shape into a loaf, and place in a greased loaf pan. Let rise again for 45 minutes.
  • Preheat oven to 375°F. Bake for 25-30 minutes, until golden brown and sounds hollow when tapped.
  • Let cool before slicing. Serve warm with butter, honey, or use for French toast!
