Instructions
Preheat your non-stick pan or griddle over medium heat. Test readiness by sprinkling a few drops of water if they sizzle, the pan is ready.
In a large bowl, sift together the all-purpose flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the water, eggs, oil, and vanilla extract (if using) until smooth and slightly frothy.
Gently pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix; small lumps are fine.
Pour about 1/4 cup of batter onto the preheated pan for each pancake. Cook until bubbles form on the surface and edges begin to set (2-3 minutes). Flip and cook another 1-2 minutes until golden.
