Ingredients
  

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar can substitute with a natural sweetener
  • 2 tsp baking powder
  • 1 pinch salt

Wet Ingredients

  • 1 1/4 cups water can substitute with almond or oat milk for extra flavor
  • 2 large eggs room temperature
  • 2 tbsp vegetable oil or melted coconut oil
  • 1 tsp vanilla extract optional for extra flavor

Optional Toppings

  • Fresh berries, sliced bananas, or diced apples
  • Maple syrup or honey
  • Powdered sugar
  • Dairy-free yogurt or whipped coconut cream

Instructions
 

  • Preheat your non-stick pan or griddle over medium heat. Test readiness by sprinkling a few drops of water if they sizzle, the pan is ready.
  • In a large bowl, sift together the all-purpose flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the water, eggs, oil, and vanilla extract (if using) until smooth and slightly frothy.
  • Gently pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix; small lumps are fine.
  • Pour about 1/4 cup of batter onto the preheated pan for each pancake. Cook until bubbles form on the surface and edges begin to set (2-3 minutes). Flip and cook another 1-2 minutes until golden.
  • Serve warm with your favorite toppings such as fresh fruit, maple syrup, or powdered sugar.
