Apple Donuts

  • 2 medium apples peeled and finely chopped
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 large eggs beaten
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • vegetable oil for frying
  • powdered sugar optional, for dusting

Instructions

  • Peel and finely chop the apples. Optionally, toss them with a sprinkle of cinnamon and sugar.
  • In a large mixing bowl, combine flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, beat the eggs, then add milk and vanilla extract. Stir until well combined.
  • Gradually pour the wet ingredients into the dry mixture, stirring gently. Fold in the chopped apples.
  • Let the dough rest for a few minutes while preheating the oil in a deep frying pan to 350°F (175°C).
  • Shape the donuts by either hand-forming rings or rolling and cutting the dough with a donut cutter.
  • Carefully fry the donuts in batches, cooking for 2-3 minutes on each side until golden brown.
  • Remove from the oil and place on a cooling rack or paper towels to drain excess oil.
  • Dust with powdered sugar if desired, and enjoy warm!

Notes

These apple donuts taste amazing fresh, but you can store them in an airtight container for up to two days. Reheat in an oven for the best texture.
