Ingredients
  

  • 2 cups leftover pasta
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or whole milk
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and pepper to taste
  • fresh parsley for garnish

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Pour in the vegetable or chicken broth and bring it to a gentle simmer.
  • Add the leftover pasta to the pot and let it cook for 5 minutes, allowing the flavors to meld together.
  • Stir in the heavy cream and grated Parmesan cheese, mixing well until the soup is creamy and heated through.
  • Season with dried oregano, dried basil, salt, and pepper to taste.
  • Let the soup simmer for another 5 minutes, stirring occasionally.
  • Serve hot, garnished with fresh parsley and an extra sprinkle of Parmesan cheese.
