  • 2 large oranges juice and zest needed
  • 2 1/2 cups all-purpose flour or chosen alternative
  • 1 1/2 cups granulated sugar
  • 4 large eggs room temperature
  • 1/2 cup unsalted butter softened, or oil
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  • Sift together the flour, baking powder, baking soda, and salt.
  • Beat the butter and sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the orange juice, orange zest, and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture until just combined.
  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
