Instructions
Place finely chopped dark chocolate in a heatproof bowl. Melt it using a double boiler or microwave in short bursts, stirring until smooth. Let cool slightly.
Whip the chilled heavy cream in a cold bowl until soft peaks form. Set aside.
In a separate bowl, beat the egg yolks, sugar, and a pinch of salt until pale and slightly thickened. Stir in the vanilla extract.
Slowly mix the melted chocolate into the egg mixture, stirring constantly to avoid curdling.
Gently fold in the whipped cream using a spatula until fully combined and airy.
Spoon into serving glasses or a bowl, cover with plastic wrap, and refrigerate for 3–4 hours or overnight until set.
