Ingredients
  

Main Ingredients

  • 8 oz dark chocolate high-quality, finely chopped
  • 1 1/2 cups heavy cream chilled
  • 4 egg yolks large, preferably free-range
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • salt a pinch

Optional Garnishes

  • fresh berries, mint leaves, cocoa powder, or chopped nuts for garnish

Instructions
 

  • Place finely chopped dark chocolate in a heatproof bowl. Melt it using a double boiler or microwave in short bursts, stirring until smooth. Let cool slightly.
  • Whip the chilled heavy cream in a cold bowl until soft peaks form. Set aside.
  • In a separate bowl, beat the egg yolks, sugar, and a pinch of salt until pale and slightly thickened. Stir in the vanilla extract.
  • Slowly mix the melted chocolate into the egg mixture, stirring constantly to avoid curdling.
  • Gently fold in the whipped cream using a spatula until fully combined and airy.
  • Spoon into serving glasses or a bowl, cover with plastic wrap, and refrigerate for 3–4 hours or overnight until set.
  • Garnish with berries, mint, cocoa powder, or nuts before serving.

Notes

For best results, use the highest quality chocolate you can find. The mousse can be made ahead and stored in the fridge for up to 2 days.
